Recipe: No-Flour Peanut Butter Cookies

Hello, everyone! This is Q’Zion, and welcome to The Joys and Trials of a Christian Teen. Those of you who follow me know that about 2 months ago, I began my fitness journey with a healthier diet and frequent exercise. One of the things that I’ve incorporated into my healthier lifestyle is new, healthier recipes to satisfy my sweet and salty cravings, while maintaining the nutritious value that our bodies need. Therefore, Goodmommy and I decided to whip up a batch of flourless peanut butter cookies!

For years, this recipe has been a favorite in our household, and it’s also perfect for anyone who has a taste for a cookie (or anything sweet) that’s not going to count for half-a-day’s worth of calories. Today I will be sharing the recipe for this chewy, sweet, and salty cookie with you all! Let’s get in to it!

INGREDIENTS

1 cup peanut butter

1 cup sugar (we used a sweetener that is 100% sugar-free, but it tastes like sugar)

1 egg

1 teaspoon of vanilla extract

1 pinch of sea salt for sprinkling

STEPS

1.) Preheat your oven to 350 degrees Fahrenheit before you prepare your batter.

2.) Mix your peanut butter and sugar together in a large bowl. In a different bowl, combine your vanilla extract and egg; whip them lightly. Pour your wet ingredients into the large bowl and mix until all the ingredients are well-combined.

3.) Take about a teaspoon-full of batter and place it onto your baking sheet/parchment paper; roll each cookie into a round ball. Don’t forget to space your cookies about 1.5 inches to give them room to spread without touching.

4.) Use the teeth of a fork to create line indents in each cookie–once vertically, and again horizontally–to create a crosshatch pattern. Only put enough pressure to create indents; we wouldn’t want to create holes in the cookies!

5.) Sprinkle a pinch of sea salt on each of your cookies.

6.) Let the cookies bake for 10-12 minutes; don’t take them out until you see the edges becoming golden brown.

7.) Let the cookies cool down for 5-7 minutes.

8.) Enjoy your soft and chewy no-flour peanut butter cookies!

We made our first batch of these delicious cookies for the first time in a while last Thursday night, and believe me when I tell you that they were gone by the next day. Peanut butter cookies are addicting, chewy, and delicious; but I love how the healthy ingredients (plus extra optional ingredients like dark chocolate, oats, and M&Ms) soothe the sweet & salty craving that pops up every once in a while.

Celebrating my Birthday #BirthdayVlog #Teenager

Hey everyone! Today, me and my Grandmother had an amazing time celebrating my birthday! I must admit, it was one of the best and most fun birthdays that I’ve ever had! In fact, I wanted to share all of the fun things that we did to celebrate with you all. ✨

And you know what makes it even better? I’m going to provide pictures in between!

So, let’s get this birthday party blog started!

First, I want to say that yesterday, my grandmother gave me these absolutely beautiful balloons. To be honest, the largest one was one of the biggest and most beautiful balloons that I had ever seen! Seriously, just look at the size of that thing!

I mean…the picture speaks for itself.

Okay, so that was amazing, but that wasn’t all that was in store for me! Afterwards, we went to the mall, and my grandmother got a beautiful bracelet for me. She also got me a charm. The front had a family tree on it, and the back said the words “Family is a circle of love.

Besides life, this is probably my favorite gift of this year’s birthday. My Goodmommy (a.k.a. grandmother) knows how much I love my family!

Afterwards, we went to a restaurant and had some delicious food. I got some chicken breast, a loaded potato, and some a French onion soup. Everything looked and tasted delicious. However, the most delicious part was…the bread!

Have you ever been to one of those restaurants where they can give you free bread before you get your food? Well, this was one of those restaurants! With a little bit of butter, the bread tasted even better! I had firsts, seconds, and the waiter was kind enough to give me and extra bag to go, lol.

Even though we took a lot of our food home, me and my Goodmommy both had a great time laughing and chatting during dinner.

Oof, I’m making myself hungry!

You would think that this was everything we did for my birthday, but it wasn’t! After eating, we both went to a store to get some cool items! I got a new sketchbook, AirPod holders, some scented pens and (non-scented) mechanical pencils for school and art class, two board games, etc.

After that, it was time to go home, and me and Goodmommy played a really exciting game of Jenga! It was one of my favorite parts of today!

It got pretty intense! Also, after a long game, Goodmommy won. But, I still had a great time! ✨

5 Nutritious (and Delicious) Foods, Drinks and Snacks

Hey, peeps! How are y’all doing today? Do you ever wish that you could find a delicious snack that is still nutritious to your body? I mean, a lot of teenagers love a good snack (or more than one, lol) Well, if so, then your wish has come true! ✨

Most people don’t know this, but there are a lot of healthy snacks and foods that can still satisfy your cravings, whether they are sweet or savory. Besides, why not eat something that’s delicious, and beneficial to your body? ✨

So, let’s get the food party started!

  1. Yogurt

I don’t know about you, but a nice and cold sweet treat is yogurt. It’s smooth, creamy, and high in protein and vitamins. Not even I do this, but experts recommend that you replace ice cream with yogurt. Even if you don’t want to do this all the time, it is definitely a healthy alternative or option when you have a taste for a creamy snack. You can even eat yogurt with your fruit!

2. Tomato soup

Although I don’t eat it every day, every once and a while, I have to admit, I never fail with a bowl of tomato soup. It’s a great alternative if you want a quick and savory-tasting dish. Tomatoes are known for having a large amount of vitamins, such as vitamin C, as well as potassium. Plus, let’s be real, especially when added to an already delicious dish, tomatoes are pretty delectable.

3. Dark chocolate

I mean, come on! There are not a lot of teens or people, in this world who don’t like chocolate. The list of positives are endless: it is smooth, sweet, and great to drizzle over an ice cream sundae. And that’s not even including the fact that, dark chocolate, in particular, is filled with a lot of antioxidants, which can cause anti-aging, and even protect you from diseases like cancer and heart disease!

4. Vegetable-based hamburgers, or hamburgers with vegetables.

I have a sneaking suspicion that a lot of people are afraid to try these, because they think that they are going to taste like plants. In fact, I haven’t heard of any teenagers that actually like these type of burgers, but I do. The best burger, in my opinion, is the Impossible Burger. It’s made completely out of plants, which is low fat, and packed with vitamins and potassium. In fact, the Impossible Burger is the best burger I’ve ever tasted!

However, if you would like, you could always add vegetables on a regular hamburger, as well.

5. Fruit smoothies

Similar to yogurt, fruit smoothies are an amazing, delicious, and healthy alternative for ice cream. They are a great way to satisfy your sweet tooth (because of the sweetness of the fruit), and fill your body with nutrients and protein. It’s a win-win!
